Food Preparation in India

It’s not uncommon for seasoned travelers to India to joke with their uninitiated friends that, if they enjoy their food at a restaurant, they shouldn’t ask to see the kitchen.  It’s a very similar to the situation with most good Mexican and Chinese restaurants in the US.  When someone pulls that joke out on me, my standard reply through a mouthful of some curried concoction is “two billion Indians can’t be wrong.”

Jokes aside, there is truly nothing like good Indian food.  The warmth of hot chicken and vegetables combined with the palate-shocking deliciousness of chili sauces with curry spices is simply delectable.  Sanitation is definite issue in India, where conditions are usually of the third world variety whether you are in the city or the country, but they seem to get by.  The fires are hot and the taste is oh-so good, so I’ll take my chances and continue to enjoy my favorite masala dishes.
